Chocolate Turkey: Holkham Hall's Christmas 2025 Centrepiece
Each year Holkham Hall in Norfolk goes all out to create an enchanting show for the Christmas season. Visitors can enjoy candlelit tours through its breathtaking 18th‑century state rooms, each filled with festive themed installations. This year, I was invited to create a show‑stopping life‑sized chocolate turkey (we named him Geoffrey) to transform Holkham’s historic kitchen into a spectacular chocolate feast.
A Chocolate Centerpiece in a Historic Kitchen
After brainstorming with the planning team we realised we needed a piece which fooled the eye completely and yet also had to somehow reveal itself as chocolate. At first glance, Geoffrey appears to be a perfectly roasted festive turkey, complete with golden‑brown skin and lifelike texture set on a grand Christmas table. On looking from one angle, however, visitors saw chocolate pouring from the jointed turkey leg revealing it as a chocolate sculpture.

The Levitating Gravy Boat Illusion
We also devised a magical levitating gravy boat illusion that quickly become one of the talked‑about moments of Holkham Hall’s Christmas kitchen. Suspended above Geoffrey, the gravy boat appeared to hover mid‑air, pouring an endless stream of rich chocolate “gravy” and emanating a delicious caramel chocolate scent.
This optical illusion mimicked traditional gravy yet had the unmistakable texture of chocolate. As it landed on the vegetables below it revealed them to be chocolate too as they appeared to melt.

A Complete Chocolate Christmas Feast
Geoffrey did not dine alone. His table was laid out as a complete Christmas dinner.

Pigs‑in‑blankets with caramelised, crispy edges, perhaps the most technically challenging element due to their precise colouring. (Did you know they have a tan line? Where the bacon shrinks back and leaves a lighter strip of sausage - I had never noticed this before making this piece.)

Steamed carrots piled high with a glossy butter glaze (cocoa butter of course).

Crispy roast potatoes confusing the tastebuds as none of us could decide which we wanted more on a cold winter's day - potatoes or chocolate?
All elements strategically melt in one area as the levitating gravy boat continues its mesmerising pour of chocolate gravy.

Technical Tricks Behind the Chocolate Illusion
Creating Geoffrey demanded the kind of problem solving that we love.

Sauce engineering
The levitating gravy boat required structural supports concealed within the stream of pouring chocolate. I bashed a copper pipe to get the angle of 'pour' exactly as I wanted then my problem solving plumber Ian soldered fittings so it would sit stable and support the weight of a heavy gravy boat. -
Colour perfection and hyper‑real roasting
Replicating the tones of perfectly roasted pigs‑in‑blankets and turkey skin involved multiple test batches. Often it is not the biggest piece that creates the biggest problem to solve. For instance it took an age to hit on the tiny detail of adding a pinkish stripe in the streaky bacon but it made them sing with porky detail.

Scale, structure, and temperature control
At a whopping 2 foot across and weighing in at around 10kg, life‑size, Geoffrey required careful temperature management throughout construction to prevent premature cooling and cracking. Not to mention a pristine lifting technique so as not to slip a disk moving him around.

Things don't always look pretty when a project starts. Here I am figuring things out with the help of a lot of tape, a cajon and a nice cuppa.

Holkham Hall’s Heritage Kitchen Meets Modern Chocolate Art
Holkham Hall’s 18th‑century kitchen, where real feasts were once prepared to feed the estate’s aristocratic guests, provides the perfect backdrop for our Geoffrey. I hope you'll agree he honoured the kitchen’s culinary legacy while introducing a playful sense of wonder for today’s visitors.
Visitor Reactions to Geoffrey the Chocolate Turkey
Holkham Hall’s guests and Christmas tour visitors have repeatedly described Geoffrey as “magnificent,” and a highlight of the Holkham Hall by Candlelight experience and he became a must‑see Christmas photo moment.
